INGREDIENTS

1 ½ cups ‘The MIX’- Blueberry Vanilla flavour.

3 Eggs.

2/3 cup Honey.

1/2 cup Melted Butter or Coconut oil.

Zest of 1 Lemon.

For the glaze:

Juice of 1 Lemon.

½ cup Powdered Sugar (adjust to your taste).

DIRECTIONS

1)  Preheat your oven to 350°F.

2) Mix wet ingredients (eggs, honey, butter, and lemon zest) thoroughly.

3) Add the MIX and stir until combined.

4) Pour the batter into a loaf tray and bake for 28-30 minutes or until a toothpick comes out clean.

5) While baking, mix lemon juice and icing sugar to make the glaze.

6) Let the loaf cool completely, then pour the glaze over the top and enjoy!

NOTES:

Optional: Add up to 1 cup of fresh blueberries to batter prior to cooking.
