INGREDIENTS
½ cup ‘The Mix’- Blueberry Vanilla flavour.
1 Egg.
1/8 cup of Water.
2 tbsp +2 tsp Unsweetened Applesauce (or mashed banana).
DIRECTIONS
1) Preheat oven to 350 degrees. Spray muffin tin with non-stick cooking spray.
Note: you will need to double the recipe to make 24 (mini) muffins.
4) Pour into muffin tray (3/4 full) and top with a blueberry (optional).
5) Place in oven and bake for 8-10 minutes.
6) Use a toothpick to test for readiness. Toothpick should come out clean when done.
NOTES:
Frozen blueberries add extra moisture to the batter causing muffins to become very moist the next day. Fresh blueberries are recommended if available, but frozen will work too. Best consumed 30 minutes after baking but can keep for 1-2 days on the countertop.
