Gluten Free Protein Muffins

Makes a double batch (24 mini muffins)
Preheat oven to 350 degrees, Bake for 8-10 mins.

INGREDIENTS 

  • 1 cup Grindstone Blends Pancake mix 
  • 2 Eggs
  • 1/4 cup water
  • 1/3 cup unsweetened applesauce (or mashed banana)

    INSTRUCTIONS 
  1. Prepare pancake mix as directed on package. Note: you will need to double the recipe to make 24 muffins. 
  2. Add unsweetened apple sauce. 
  3. Add in desired toppings.
  4. Place in muffin tray and bake.
  5. Use a toothpick to test for readiness. Toothpick should come out clean when done. 

    NOTES 
  • Optional toppings – frozen berries/brown sugar
